The Place de la Gayme in Besse-et-Saint-Anastaise, an integral part of the rich historical and cultural heritage of the medieval city of Besse, is of unique importance as a hub for the cheese trade and local commerce. Situated at an altitude of 1050 metres on a lava flow,

Besse et Saint Anastaise established itself as a pivotal stopover, a relay point, a market and a funfair in medieval times. In 1270, the town's bourgeoisie acquired its municipal charter from the lord of the Tour d'Auvergne, thus strengthening Besse's position as a centre of trade and commerce in the region.

One of the particularities of Besse was to have two dedicated market squares: the Place Centrale, now Place du Docteur Pipet, and the now legendary Place de la Gayme, formerly Place au Blanc. The central square, where wheat imported from the plains was traded, was located next to the grain market (now the town hall), built in the 1860s. During this time, the Place de la Gayme served as the designated market place for Saint-Nectaire cheese, whose name derives from the pale colour of the cheese during the early stages of production before it was aged.
